Chef Niall Ó Conchúir heads down to Wicklow on a chilly winter's morning to meet Hilda Crampton on her organic farm in Castleruddery. She has an array of wonderful seasonal produce. Niall settles on some leeks and conjures up a plate of them cooked in cider served on a bed of braised lentils - comfort food for a dark and damp winter evening at its simplest. Meanwhile, back in the kitchen, Rebecca Uí Chonaola gets to grips with some beetroot and puts together a terrine with some home-made tofu cheese. She also makes a crispy strudel with shredded celeriac, which she serves up with a simple green olive sauce
