It's the first quarter-final, for which judges Marcus Wareing and Monica Galetti set an invention test in which the professionals must make a dish using king prawns - an ingredient whose delicate flavour is easy to destroy without keeping a steady hand and an eye on the timings. After that, they serve up a two-course meal for critics Tom Parker Bowles, Leyla Kazim and Jimi Famurewa, before the judges decide who deserves a place in knockout week
