Marcus Wareing, Monica Galetti and Matt Tebbutt present the last week of heats, for which they are joined by 2018 finalist Matthew Ryle, who sets the skills tests. Known for his French classic cookery, Matthew asks the first two chefs to take on his red mullet with braised fennel, citrus salad and blood orange hollandaise, before the second two serve up roasted poussin with peppercorn sauce and a potato garnish of their choosing
