Northern Ireland chefs Colin McSherry, Lottie Noren, NIall Sarhan and Melissa McCabe cook canapes, starters and fish dishes inspired by the Olympics and Paralympics. One of the chefs cooks a courgette-based dish resembling a shot-put for a starter, while the fish dishes are a classical French surf and turf of hake and braised beef shin, monkfish with a fusion of Asian tastes and trout served two ways
