Chefs from Northern Ireland cook mains and desserts inspired by the Olympic and Paralympic games. Main dishes include a rib of beef, with pomme anna, filled with sticky oxtail, and roasted squab pigeon, with sweetcorn puree, ceps, smoked mash pie and pigeon jus. Desserts feature a passionfruit and white chocolate winner's medal, based on the design of the Paris 2024 gold
