The quarter-finalists compete in challenges set by the judges to test their innovation. They have just 10 minutes to plan a dish based around the combination of orange and ginger. With a variety of ingredients at their disposal they then have just 70 minutes to prepare and serve a dish of their own creation. The chefs then have one hour and 15 minutes to cook four perfect portions of a two-course menu of their own design to be critiqued by three of the country's most experienced food critics
