Former finalist Matthew Ryle is back to challenge the next four contestants' skills, asking them to re-create two of his recipes - raviolo stuffed with pea and ricotta, alongside a cheesy pepper sauce, and poached pear mille-feuille with a hazelnut praline cream. The chefs then serve up their signature dish, after which Marcus Waring, Monica Galetti and Matt Tebbutt decide who deserves to go through to the quarter-final
