Suzie Lee Arbuthnot visits Tully Mill Restaurant in Co Fermanagh, home of award-winning chef John Roche. John uses local, seasonal ingredients, many of which come from a National Trust kitchen garden. He shows Suzie how to make a beetroot gin cured salmon as a starter and one of his signature dishes, Fermanagh-cured black bacon served with celeriac, carrot and apple purées, plus a black pudding bon bon, as a main course. His dessert is a black cherry and chocolate delice. Back in her own kitchen, Suzie whips up restaurant-quality recipes - with hacks to make these achievable and affordable
