The chef recreates a selection of dishes from a banquet held in 1859 at held in Belfast's Music Hall to commemorate the centenary of the birth of Scotland's most famous bard. Paula will be cooking for 12 guests in the beautiful surroundings of Montalto House, near Ballynahinch, and joined by food historian Annie Gray and Ulster-Scots broadcaster and blogger Mark Thompson. The menu includes chicken and almond soup, haggis, oyster Vol-au-Vent, turkey with truffles, a strawberry tartlet and an apple meringue
