Alex Polizzi sets out to improve the fortunes of the 16th-century Swan Hotel in Harleston, Norfolk, which remains unrated and has never shown a profit. Threadbare carpets, an unmanned reception and urine stains on the bathroom floors are some of the problems facing owner Robin Twigge, as well as a lack of guests in the restaurant. Alex suggests he strip down his menu and redecorate the dining area, but with the relaunch looming, difficulties arise in the kitchen
