Rebecca Uí Chonaola visits Beech Park farm, a four-acre farm located beside Clonsilla train station in the west of Dublin. While there, she makes French toast with a difference - it is completely egg free and rather than a sweet topping, is topped with some freshly harvested pointed green peppers, artichokes and chermoula. Niall Ó Conchúir is holding the fort in the kitchen and he conjures up a plant-based tortilla de patatas with romesco sauce and a vegan mole served over some coconut and lime polenta
