The bikers sample cuisine in Sweden, home to some of the world's top chefs, and cross the Arctic Circle into Lapland, where they learn about the basic cooking techniques used by the Sami people. They are introduced to the traditional techniques of smoking to cure meat, manufacturing hunting knives, and fishing to stock up for the coming winter. Using some local ingredients, Si and Dave treat their hosts to a berry and almond rice pudding and prepare their own Nordic reindeer and fish dishes
